Eggs in Marinara
A quick, simple breakfast
Eggs in Marinara
Skillet
Eggs - we use 4 eggs for two people
Marinara sauce - I like Mezzetta's and use a whole jar
A couple spoonfuls of harissa or gojuchang or spicy stuff (OPTIONAL)
Some sort of salt/seasoning/sriracha salt
Salty cheese (I love mizithra or feta, parmesan is also good)
Directions:
- Pour marinara sauce in skillet, enough to come a little ways up your eggs. A half or whole jar works, depending on how big it is.
- If using harissa or gojuchang or spicy stuff, mix it into the marinara now.
- Bring marinara to boil.
- Make indentations for however many eggs you're using. Gently crack eggs into indentations. Season eggs.
- Turn down heat so marinara isn't popping everywhere, cover skillet.
- Cook until your eggs are to your liking. They will likely only take a couple minutes.
- Add lots of salty cheese.
