Quinoa Burrito Bowl
Great for nights that you don't want to cook.
Quinoa Burrito Bowl
1 cup quinoa - Instant Pot Quinoa recipe
1 red onion, diced small
Corn - 2 ears cut off cob, or one can of corn rinsed
Cherry tomatoes, a basketful or so
Can of black beans, rinsed
2 chopped Habanada habanero peppers, or 1 chopped bell pepper
2 sliced up avocados
Handful of chopped cilantro
Juice of 2+ limes
Directions:
Mix everything together.
Notes:
I like to cook the diced onion in a little butter until it start to brown. Way more flavorful and you won't taste it for days afterwards like if it was raw.
To cook corn on the cob, boil water, add corn, boil for 4 minutes. Rinse under cold water to cool before cutting.
Habanada habanero peppers are habaneros without any spice. Delicious and PERFECT for this dish. We grow them. Today I learned that habanero does NOT have a tilde over the N.
