Simple Faux Pastry Cream
This is divine and can be used in a lot of different ways.
Simple Faux Pastry Cream
1 - 3.4oz box instant vanilla pudding
8oz mascarpone cheese
1-2 cups heavy cream (however much you've got works fine)
Directions:
- Make instant pudding according to directions (it's usually 2 cups cold milk, add pudding mix, whisk for 2 minutes, but check your box to make sure).
- Whisk in mascarpone until it is smooth and no longer lumpy.
- In another bowl/cup, use mixer or blender to whip cream.
- Gently fold whipped cream into pudding/mascarpone mix.
Notes:
This can be made with ANY KIND of instant pudding mix. Lemon is great with summer fruit. Vanilla is great for homemade tiramisu (coming soon).
I use an immersion blender to make the whipped cream. Easy cleanup and takes just a couple minutes.
