Kosher Salt Note

The two major brands of Kosher salt in the US are Diamond and Morton's.

Diamond is about half as salty as Morton's. 

I prefer Diamond Kosher salt and that's what I use in my house.

In recipes that call for Kosher salt, I use the full amount because I use Diamond. I think folks who use Morton's have to make adjustments.
