Barramundi with Coconut Rice and Pineapple Slaw

This is a riff on a meal from the Green Chef meal kit delivery. This is WAY better too.
It has some specialized ingredients, notes at the end.
Ingredients
There are three main components to this recipe, underlined text delineates them from one another.
Prepared white rice, whichever way works best for you - see my Instant Pot White Rice recipe- Per cup of rice add:
-- A handful of cilantro (choose your own adventure)
-- 2 TBSP shredded coconut
-- 1 TBSP coconut cream/milk, if you've got any (optional)
1/2 cup pineapple, cut into small pieces (canned is fine)
A couple Roma tomatoes (or other meaty tomato), diced
Zest and juice of 1 lime
1 TBSP olive oil
A small amount (1/2-1 cup) of shredded cabbage, I like red
2 Barramundi filets (see note)
Smoked paprika (see note)
Trader Joe's Everyday seasoning (see note)
Sriracha salt (see note)
3 TBSP orange juice
Some pineapple juice (optional)
1 TBSP butter
A couple Roma tomatoes (or other meaty tomato), diced
Zest and juice of 1 lime
1 TBSP olive oil
A small amount (1/2-1 cup) of shredded cabbage, I like red
2 Barramundi filets (see note)
Smoked paprika (see note)
Trader Joe's Everyday seasoning (see note)
Sriracha salt (see note)
3 TBSP orange juice
Some pineapple juice (optional)
1 TBSP butter
Preparation
- Prepare rice however you make it, add cilantro, shredded coconut, and coconut milk to rice in ratios listed in ingredients.
- Mix together pineapple, tomatoes, shredded cabbage, lime zest, juice of half of the lime, 1 TBSP olive oil, 1 TBSP orange juice (double if you don't have pineapple juice), 1 TBSP pineapple juice. Set aside.
- Pat fish dry and season both sides with smoked paprika, Trader Joe's Everyday Seasoning, and Sriracha salt. Heat a non-stick skillet to medium heat, cook fish 3-5 minutes on first side. Flip, add 2 TBSP orange juice (increase to 3 TBSP if you don't have any pineapple juice), 1 TBSP pineapple juice, and 1 TBSP butter to skillet. Once butter melts, baste the fish with the liquid in the pan every 30-60 seconds. Cook until internal temperature of fish reaches 145F.
- Plate rice with the slaw on top, fish on the side. Use rest of lime juice if you want.
Notes
The only paprika I use is Penzey's Spices Smoked Spanish Paprika. It is a spice I will never be without. Any other smoked paprika can't even come close to this, and they all taste stale in comparison.
Trader Joes makes this Everyday Seasoning that is a grinder with a BUNCH of stuff in it. It's awesome. Highly recommend.
I have a jar of Sriracha salt from a company that no longer makes it, but apparently it is fairly easy to make? Here's a recipe for it.
Barramundi is a farmed fish from Australia and Sprouts typically carries it for $10 for 2 fairly decently sized filets. It's frozen. Just make sure to get the plain kind, as they do also carry pre-seasoned varieties.
