Broccoli Cheddar Mac N Cheese
A riff off of a Damn Delicious recipe, but I changed up a few things.
Broccoli Cheddar Mac N Cheese
4 cups broccoli, sliced into small pieces
Olive oil
Kosher salt
2 cups chicken broth
2 cups water
3 TBSP butter
1 tsp Dijon mustard
Generous dash garlic powder or granulated garlic
5oz evaporated milk
1 cup half and half (=1/2 cup milk + 1/2 cup cream)
12oz sharp cheddar, or mix of cheeses you like
Salt and pepper to taste
Directions
- Heat toaster oven to 425F.
- Prep broccoli, place in single layer on cookie sheet. Spray (or lightly drizzle) with olive oil and a sprinkle of kosher salt. Move pan back and forth quickly to coat. Put into oven and roast until it's time to put them into the pasta mixture at the very end.
- Add chicken stock, water, and pasta to Instant Pot. Set Manual for 5 minutes. Quick release when timer goes off - meaning press Off, and carefully turn the vent from sealing to venting without waiting for a few minutes. See my note about a kitchen towel below.
- Set Instant Pot to Saute, add butter to pasta until melted.
- Add Dijon and garlic powder. Mix to combine.
- Add evaporated milk and half and half and mix often until bubbling.
- Press Off, and then Off again to set it to Warm.
- Add handfuls of cheese and stir until each is just combined. This might take a couple minutes to smooth out.
- Add roasted broccoli at the end, stir to combine.
- Add pepper and more salt if desired.
Notes
The pasta you choose should have some heft to it - on the bigger side. If you choose a smaller, less dense type of pasta, don't cook it as long.
Evaporated milk makes this so creamy. Evaporated milk is NOT the same as sweetened condensed milk.
DO NOT add the butter to the water/pasta mix in the Instant Pot! If you do, it will splatter everywhere upon quick release. I always cover my Instant Pot vent and lid with a kitchen towel while releasing any pressure. It helps keep things clean. (Just don't cover it tightly! I lightly lay it over the vent.)
You can probably use any dairy mix of cream, half and half, and/or milk in this (even sour cream or yogurt even!), I can't vouch for non-dairy milks - your mileage may vary.
