Creamy Pasta with Dill

 Based on a local grocery store meal kit.



Creamy Pasta with Dill

1 box (16oz) small shells pasta (or other small pasta shape)
1 tsp + 1 tsp Kosher salt (2 tsp total)
1.5 cups milk
1 package cream cheese
3/4 cup feta
1 TBSP olive oil
1 yellow onion, diced
3 cloves garlic, chopped
Zest and juice of 1 lemon
1+ cups grape tomatoes, sliced in half OR sun dried tomatoes
Handful kalamata olives
1.5 TBSP chopped dill
Handful of spinach/arugula/other green

  1. Cook pasta according to box directions, adding 1 tsp salt to water.
  2. Add milk, cream cheese, and feta to a bowl and microwave until mostly melted and combined. Some lumps are fine.
  3. Add olive oil to pan, set to Medium High heat. 
  4. Add onions and 1 tsp salt and cook for 3 minutes.
  5. Add garlic and lemon zest and cook for about 3 minutes.
  6. Add milk mixture to pan, reduce heat to medium. Once bubbling, add tomatoes, olives, dill, and greens to heat through.
  7. Add lemon juice and mix well before serving hot.

Notes

If using a larger size pasta, use less than a whole box.

Feta using sheep's milk is best, but cow's milk feta is cheaper and more readily available.

White onion works too, but yellow is best.

You can easily add chicken and other add ins to this.
