Pickled Refrigerator Red Onions

1 red onion, sliced into thin rings

Juice of 2 limes

1/2 tsp sugar


Directions

  1. Add onion slices to small, microwave proof bowl. Add juice of two (or more) limes and 1/2 tsp sugar, mix until all onion slices are contacted by the lime juice and sugar.
  2. Microwave for 30 seconds at a time, stirring after each burst, until onions start turning slightly pink. This will take two or three 30 second bursts. No need to overdo it though. 
  3. Set aside to cool, refrigerate for up to two weeks.
