Frosted Pumpkin Spice Scones

This is similar to the Starbuck's pumpkin scones. I married a few different recipes from online to make these. 


Pumpkin Spice Scones

2 1/4 cups AP flour (270g)

2 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger

1/8 tsp ground cloves

1/4 cup brown sugar

3 TBSP white granulated sugar

8 TBSP (1/2 cup) cold butter, cut into small chunks

Heaping 1/2 cup pumpkin puree (meaning add a little extra)

Scant 1/4 cup buttermilk (meaning not quite 1/4 cup)

1 egg

1 tsp vanilla extract

1 TBSP honey

Glaze

1/2 cup powdered sugar (112g)

1 TBSP milk, half+half, or cream

Other

1 TBSP milk, half+half, or cream


Directions

Preheat oven to 425F.

In a small bowl, whisk together pumpkin puree, buttermilk, egg, vanilla, and honey until well combined.

In a food processor, pulse together flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, cloves, brown sugar, and white sugar until combined. Add butter chunks and pulse until the butter is combined, but some small pieces are still visible.

In a large bowl, add flour mixture and then pour the pumpkin mixture over it. Combine with a spatula until all combined, and then turn onto a silpat that's been dusted with a small bit of flour or parchment paper. Knead with hands to bring together and then pat into a small round. Cut circle in half, then in half again to make 4 scones, then cut each of those in half again to make 8 scones.

Carefully transfer scones to baking sheet. Brush tops with milk (or half+half or cream)

Bake for 15 minutes (or a little longer) until browned and a toothpick comes out clean.

While baking, make glaze by whisking powdered sugar and milk (or half+half or cream) until no lumps remain. Once removed from oven, drizzle over warm scones using a spoon.


Notes

For buttermilk, I use buttermilk powder that I keep in the fridge. I use 1 TBSP buttermilk powder + 1/4 cup water or milk.

I prefer mine less sweet than the Starbuck's version. You can double the glaze if you like it sweeter.

Half+half is 50% milk and 50% cream. It's readily available in the United States.
