Chicken lettuce cups
2 TBSP oil for pan
1/5 cups white rice, prepared in Instant Pot
1/4 cup soy sauce
2 TBSP brown sugar
1 TBSP Sriracha
3 scallions, white and pale green parts only, finely sliced
2 cloves garlic, chopped finely
1 TBSP ginger, finely chopped
1 lb. ground chicken
For serving:
Bibb lettuce leaves
Lime wedges
Cilantro, chopped
Refrigerator pickled onions
Directions
- Start rice in Instant Pot
- Mix soy sauce, brown sugar, Sriracha in small bowl
- Add oil to pan on medium high heat
- Add garlic, ginger, and scallions to oil. Cook for a few minutes until just starting to brown.
- Add chicken to pan, break up with wooden spoon, tossing occasionally, and cook until cooked through, about 5-7 minutes.
- Add sauce to pan and cook until nearly reduced.
- Add rice to pan and mix. Serve warm with lime juice, pickled onions, cilantro, and Bibb lettuce leaves.
