Chicken Lettuce Cups

Chicken lettuce cups

2 TBSP oil for pan

1/5 cups white rice, prepared in Instant Pot

1/4 cup soy sauce

2 TBSP brown sugar

1 TBSP Sriracha

3 scallions, white and pale green parts only, finely sliced

2 cloves garlic, chopped finely

1 TBSP ginger, finely chopped

1 lb. ground chicken


For serving:

Bibb lettuce leaves

Lime wedges

Cilantro, chopped

Refrigerator pickled onions


Directions

  1. Start rice in Instant Pot
  2. Mix soy sauce, brown sugar, Sriracha in small bowl
  3. Add oil to pan on medium high heat
  4. Add garlic, ginger, and scallions to oil. Cook for a few minutes until just starting to brown.
  5. Add chicken to pan, break up with wooden spoon, tossing occasionally, and cook until cooked through, about 5-7 minutes. 
  6. Add sauce to pan and cook until nearly reduced. 
  7. Add rice to pan and mix. Serve warm with lime juice, pickled onions, cilantro, and Bibb lettuce leaves.
